Team Maroon's Mother's Day Biscuit Box Recipes

Coconut Biscuits 

120g Clover butter
40g sugar
2 cups of flour
125g dedicated coconut
1/2 tsp Royal Baking Powder
Fresh orange(zest)
1/2 tsp of cinnamon
crushed cashew nuts

 

  1. Preheat your oven to 180°
  2. Place butter and icing sugar into the bowl of an electric mixer and mix on a medium speed for 5-7 mins or until is light creamy
  3. Reduce the speed of the mixer to slow and gradually, add the flour, 1cup at a time. Mixing well after each addition
  4. Mix for further 30 seconds or until mixture begins to resemble pastry
  5. Add coconut, orange zest, cinnamon, cashew nuts and continue mixing until it is properly mixed
  6. Roll the pastry until and cut into desired shape
  7. Bake for 10-15 minutes or until the edges are just beginning to turn golden brown
  8. Remove biscuits from the oven and allow to cool

 

Jam Cookies

2 cups of flour
1/2 teaspoon of Royal Baking Powder
30ml icing sugar
1/2 salt
125g Clover butter softened
5ml vanilla 
1 lemon 
Jam
2 eggs

  1. Preheat the oven to 180°
  2. Mix all dry ingredients in a bowl, sift to times and set aside(except icing) 
  3. On another bowl, add butter and icing sugar, whisk until it looks creamy
  4. Add one egg at a time and whisk
  5. Add dry ingredients to the mixture
  6. On a bowl of your jam, cut lemon and squeeze in the juice, stir a bit a set aside
  7. Kneed down pastry, on a clean level surface that you have dusted with flour
  8. Gently place on a greased pan
  9. Bake 12-15 minutes at 180° until golden
  10. Remove from the oven and leave in the tray
  11. Spread jam and sprinkle lemon zest
