Lesego's Wedding Cake

Vanilla Cake
Ingredients
2 cups flour
2 1/2 teaspoons baking powder
1/4 tsp salt
4 large eggs
1 1/2 cups sugar
115g butter
1 cup milk
3 tsp vanilla extract
3 tsp vegetable or canola oil
Method
- Cream butter and sugar, then add eggs one at a time. Add dry ingredients. Bake in a 180*C oven
Cream Cheese Frosting
Ingredients
225g / 2 sticks unsalted butter, softened
500g powdered sugar, SIFTED
1/3 cup cream cheese
3 tsp vanilla extract
Method
- Mix in a stand mixer until light and fluffy.
Assembly
- Fill cakes with buttercream and lemon curd.
Chocolate Cake
Ingredients
1 3/4 cups flour
3/4 cup unsweetened cocoa powder
1 1/2 teaspoon baking powder
1 1/2 teaspoon baking soda
1 teaspoon salt
2 cups white granulated sugar
2 large eggs
1 cup milk
1/2 cup canola oil
2 teaspoons pure vanilla extract
1 cup boiling water
Method
- Sift together flour, cocoa, baking powder, baking soda and salt into a large bowl. Whisk in sugar, then add eggs, milk, oil and vanilla. Whisk well to combine until lump free, about 30 seconds.
- Pour boiling water into batter, mixing well. Cake batter is thin in consistency. Bake in a 180*C oven.
Cream Cheese Frosting
Ingredients
225g / 2 sticks unsalted butter, softened
500g powdered sugar, SIFTED
1/3 cup cream cheese
1/3 melted dark chocolate
3 tsp vanilla extract
Method
- Mix in a stand mixer until light and fluffy.
Assembly
- Full cake with buttercream and strawberry jam filling.
