Vanilla Cake

Ingredients

2 cups flour
2 1/2 teaspoons baking powder
1/4 tsp salt
4 large eggs
1 1/2 cups sugar
115g butter
1 cup milk
3 tsp vanilla extract
3 tsp vegetable or canola oil

Method

  1. Cream butter and sugar, then add eggs one at a time. Add dry ingredients. Bake in a 180*C oven

Cream Cheese Frosting

Ingredients

225g / 2 sticks unsalted butter, softened
500g powdered sugar, SIFTED
1/3 cup cream cheese
3 tsp vanilla extract

Method

  1. Mix in a stand mixer until light and fluffy.

Assembly

  1. Fill cakes with buttercream and lemon curd.

Chocolate Cake

Ingredients

1 3/4 cups flour
3/4 cup unsweetened cocoa powder
1 1/2 teaspoon baking powder
1 1/2 teaspoon baking soda
1 teaspoon salt
2 cups white granulated sugar
2 large eggs
1 cup milk
1/2 cup canola oil
2 teaspoons pure vanilla extract
1 cup boiling water

Method

  1. Sift together flour, cocoa, baking powder, baking soda and salt into a large bowl. Whisk in sugar, then add eggs, milk, oil and vanilla. Whisk well to combine until lump free, about 30 seconds.
  2. Pour boiling water into batter, mixing well. Cake batter is thin in consistency. Bake in a 180*C oven.

Cream Cheese Frosting

Ingredients

225g / 2 sticks unsalted butter, softened
500g powdered sugar, SIFTED
1/3 cup cream cheese
1/3 melted dark chocolate
3 tsp vanilla extract

Method

  1. Mix in a stand mixer until light and fluffy.

Assembly

  1. Full cake with buttercream and strawberry jam filling.
