Nondumiso's Masterclass Vegan Hertzoggie

Yield: 8-10 Hertzogies

2 cups flour
250 g sugar
1 tsp baking powder
Pinch of salt
1 cup vegan butter
1 cup apple sauce
1 cup aquafaba
1 tsp vanilla essence
1.5 cup of desiccated coconut
Apricot jam for filling

Base and Filling:

  1. Preheat the oven to 180° C.
  2. Grease the muffin tray.
  3. Add flour, 150 g of sugar, baking powder, salt, butter, apple source to a large bowl.
  4. Mix ingredients until we’ll incorporated.
  5. Divide dough into the muffin tray.
  6. Add about a ¼ tsp of jam into the dough. (You may also use a berry compote as the filling).


  1. Beat the aquafaba using an electric whisk until the aquafaba forms soft peaks.
  2. Fold vanilla essence and 100 g of sugar into the aquafaba.
  3. Fold desiccated coconut into the aquafaba mix.
  4. Put about a spoon of the aquafaba mix on top of the jam filling so that the aquafaba mix covers the jam filling.
  5. Bake for about 20 minutes.
  6. May enjoy warm or cold.
