Rio’s Savoury Swiss Roll:

Swiss Roll:
3 eggs
8g oil
30g Clover fresh milk
60g flour
1/4 tsp cream of tarter
26g granulated sugar

  1. Whip egg yolks, oil and milk
  2. Sift flour into milk and egg mixture
  3. Whip egg white until medium peak with sugar
  4. Folk egg white into other mixture in 3 additions

Filling:
200g goats cheese
500g cream cheese
1 tsp lemon juice
1 tsp orange zest
2 tsp salt
2 tsp honey
1/4 cup chopped roasted walnuts
3 tsp chili crunch (dried chili, roasted seeds, olive oil, cayenne and garlic)
2tsp chopped fresh thyme

  1. Combine

Topping:
Prosciutto
Toasted walnuts
Figs glazed in honey and butter
Thyme
Honey
Pepper and salt
