Zakes' Fried Orange Pound Cake & Baked Chocolate Churro with Rosemary Panna Cotta

Pound Cake

2 Eggs
113g Butter
100g sugar
100g Flour
60ml Sour Cream
Pinch Salt
1 Tsp Vanilla / Orange Essence
1 Tsp Baking Powder

  1. Cream butter sugar and eggs together until pale. Add buttermilk and dry ingredients Till smooth better form.

Batter

1 Egg
1/3 Cup Flour
1 Tsp Baking Powder
1 Tbs Sugar

Pistachio Brittle

100g Sugar
100g Pistachio
100g Water

  1. In a saucepan, pour sugar water, boil to reduce and create a caramel, add pistachios and place on a silicone mat to cool once cooled roughly blitz in a food processor.

Pistachio Churro

1 Cup water
85g butter
2 Tsp. granulated sugar
1 Tsp. pure vanilla extract
1 Cup Flour
1 tsp Salt
2 Large Eggs
60g Pistachio Blended

  1. In a saucepan simmer of water with butter to melt, add 1 Tbsp pistachio brittle and follow with flour, cook the flour for 5 mins and place into a mixing bowl and beat for 2mins to cool add the eggs one at a time till batter is smooth.
  2. Dip in dark chocolate and pistachio.
  3. Place in a piping bag and add chopped dark chocolate top with more choux batter and bake for 15mins at 200 in an airfryer.

Panna Cotta

Rosemary ‐1 sprigs
1.2 Cup Milk
1.2 Cup Cream
1.2 Cup Yoghurt
2 Sheets Gelatine
1 Drop Vanilla Essence

  1. In a saucepan heat milk and rosemary and with a wooden spoon bruise the herb to extract the flavor. Aside bloom gelatin leaves in a bowl of cold water and squeeze out excess water and add to the milk mixture and set the pot aside.
  2. Add yoghurt, cream and vanilla essence. Pour into molds and chill in the refrigerator.

Cranberry Sauce

1 Cup of Cranberries
1 Cup Apple Juice
3 Tbs Apple Sauce

  1. In a saucepan combine dried cranberries, apple juice and apple sauce on a medium heat and cook to reduce slightly.

Orange Sphere

3 Tbs Cornflour
2 Tbs Sugar
2 Cups Orange Juice
Mix until thick and clear.

  1. Combine corn flour and sugar in a saucepan place on a medium heat, add orange juice and simmer till thick and clear. Pour into small round malls and chill.

Process of Frying

  1. Take the orange sphere dip in pound cake batter and dust with corn flour and dip in the batter and fry till golden brown.
  2. Plate as desired and enjoy.
