Phillip’s Blueberry and Lemon cake

Blueberry and Lemon Cake:
4 cups cake flour
1 cup blueberries
lemon zest of one lemon
1 cup water
1/2 cup lemon juice
4 tsp Royal Baking Powder
4 eggs
1 1/2 cups sugar
1 cup Clover butter
Buttercream:
2 cups icing sugar
125g Clover butter unsalted
1 tsp lemon essence
lemon zest
1 Tbs cold water
Method:
Cake:
- Cream butter and sugar together
- add eggs gradually and combine
- add all dry ingredients and mix until just combined
- put mixture into prepared baking trays and bake in an preheated oven 180%.
- bake for 1 hour
Icing:
- Whisk butter until creamed and add flavour
- add sifted icing sugar and mix in medium speed.
- just blend lemon zest with spatula
