Fritz’s dish: ostrich and garlic bread dish

Bread

1 1/2 cup flour
1 tsp salt
2 tsp yeast
3 tbsp olive oil
1/2 tbsp sugar
3/4 cup lukewarm water

Method

  1. Add flour, salt, sugar and yeast to a bowl
  2. Add the olive oil and mix
  3. Add water and mix until a dough is formed
  4. Knead the dough and let rest for 30 min
  5. Fold over itself and leave to rest for another 15 min
  6. Form the dough into the desired shape and rest for 15 min
  7. Bake for 20 min at 180 degrees Celsius

Garlic Bread

  1. Place a little bit of olive oil and cut up garlic in a frying pan
  2. Cut the bread into thick slices and fry in the olive oil until toasted

Ostrich Steak

  1. Let the steaks sit in a bit of balsamic vinegar for 10 min
  2. Heat a frying pan and place a small amount of olive oil in it
  3. When the pan is very hot add the streaks
  4. Fry for about 5 min each side

Balsamic Sauce

Ingredients

1/2 cup balsamic vinegar
1 tsp honey

Method

  1. Heat in a saucepan until slightly thick
  2. Pour over streak

Whipped Feta

Blend feta, salt and parsley

Zola’s Dish: Coffee Cake

Coffee Cake

Ingredients

1/4 cup butter
1/2 cup sugar
1 egg
1/4 cup milk + 1 tbsp instant coffee
1 tsp vanilla essence
3/4 cup flour
1 tsp baking powder

Method

  1. Cream butter and sugar
  2. Add egg
  3. Mix the instant coffee in the milk
  4. Add the milk mixture and vanilla and mix
  5. Add flour and baking powder, mix and put in baking pan
  6. Bake for 10 min and 180 degrees Celsius

Hazelnut Crumb

Ingredients

1 cup hazelnuts
1/2 cup sugar

Method

  1. Heat the sugar on the stove until melted
  2. Add hazelnut and remove from heat
  3. Once cool blend in a blender until a fine crumb

Mascarpone Icing

Ingredients

50g butter
1 cup icing sugar
85g mascarpone cheese
2 tbsp of hazelnut crumb

Method

  1. Cream the butter and icing sugar together
  2. Add the mascarpone and hazelnut and mix slowly until combined

Strawberry Filling

Ingredients

5 large strawberries
1/4 cup sugar

Method

  1. Cut strawberries into small pieces and place in a saucepan
  2. Add sugar
  3. Heat till thick

Luke’s Dish: Vol Au Vent 

Rough Puff

Ingredients

1 1/2 cup flour
1 cup cold butter
1/2 tsp salt
3 tbsp cold water- add more water if needed

Method

  1. Grate half of the butter and place it in the freezer
  2. Cube the other half of butter and add it to the flour and salt, roughly combine
  3. Add water and form a dough
  4. Place in the fridge for 10 min
  5. Roll out the dough and add 1/3 of the frozen grated butter evenly in a centre strip of the pastry and fold the sides over
  6. Roll out the dough again and fold the same way
  7. Place in the fridge for 10 min
  8. And repeat until all the grated butter has been added

Vol Au Vent

  1. Roll out the pastry
  2. Cut out circles
  3. In half of the circles, cut a smaller circle inside
  4. Place a full circle and a cut circle on top of each other and brush with egg wash
  5. Bake for 5-7 min at 180 degrees Celsius

Chicken and Mushroom Filling

Ingredients

1 chicken breast
2 mushrooms
1 tbsp butter
1 tbsp olive oil
1/2 tsp garlic
1 tbsp flour
Pinch of pepper
Pinch of paprika
1/2 tsp mustard seeds
Salt
1 tbsp cream

Method

  1. Cut chicken into tiny pieces and fry
  2. Cut mushrooms and add to chicken
  3. Add the olive oil, butter and garlic to chicken
  4. Once melted mix in the flour
  5. Add spiced
  6. Add cream
  7. Remove from heat and spoon into vol au vent shells

My Memory Dish: Pastéis de Nata

Syrup

Ingredients

100g sugar
1 strip lemon zest
1 cinnamon stick
100ml water

Method

  1. Place in a boil and let simmer for a few min, until sugar is dissolved

Custard

Ingredients

1 egg
2 egg yolks
25g cornflour
250ml milk
2 tsp vanilla essence
1/2 tsp cinnamon

Method

  1. Heat up the milk
  2. Combine the eggs, vanilla, cinnamon and cornflour
  3. Slowly add the milk to the egg mixture, mixing constantly
  4. Transfer back to the heat and mix until thick
  5. Add in the syrup
  1. Roll out the rough puff pastry using a little bit of icing sugar
  2. Roll the dough into a spiral and cut into discs
  3. Flatten then discs and place into muffin tray
  4. Add custard
  5. And bake for 15 min or until custard has browned, at 180 degrees Celsius

Cookie Crumb

Ingredients

1/4 cup flour
1/4 cup sugar
4 tbsp butter
1 tsp salt

Method

  1. Rub all the ingredients together until crumb is formed
  2. Bake for 10 min at 180 degrees Celsius
