Fritz’s dish: ostrich and garlic bread dish
Bread
1 1/2 cup flour
1 tsp salt
2 tsp yeast
3 tbsp olive oil
1/2 tbsp sugar
3/4 cup lukewarm water
Method
- Add flour, salt, sugar and yeast to a bowl
- Add the olive oil and mix
- Add water and mix until a dough is formed
- Knead the dough and let rest for 30 min
- Fold over itself and leave to rest for another 15 min
- Form the dough into the desired shape and rest for 15 min
- Bake for 20 min at 180 degrees Celsius
Garlic Bread
- Place a little bit of olive oil and cut up garlic in a frying pan
- Cut the bread into thick slices and fry in the olive oil until toasted
Ostrich Steak
- Let the steaks sit in a bit of balsamic vinegar for 10 min
- Heat a frying pan and place a small amount of olive oil in it
- When the pan is very hot add the streaks
- Fry for about 5 min each side
Balsamic Sauce
Ingredients
1/2 cup balsamic vinegar
1 tsp honey
Method
- Heat in a saucepan until slightly thick
- Pour over streak
Whipped Feta
Blend feta, salt and parsley
Zola’s Dish: Coffee Cake
Coffee Cake
Ingredients
1/4 cup butter
1/2 cup sugar
1 egg
1/4 cup milk + 1 tbsp instant coffee
1 tsp vanilla essence
3/4 cup flour
1 tsp baking powder
Method
- Cream butter and sugar
- Add egg
- Mix the instant coffee in the milk
- Add the milk mixture and vanilla and mix
- Add flour and baking powder, mix and put in baking pan
- Bake for 10 min and 180 degrees Celsius
Hazelnut Crumb
Ingredients
1 cup hazelnuts
1/2 cup sugar
Method
- Heat the sugar on the stove until melted
- Add hazelnut and remove from heat
- Once cool blend in a blender until a fine crumb
Mascarpone Icing
Ingredients
50g butter
1 cup icing sugar
85g mascarpone cheese
2 tbsp of hazelnut crumb
Method
- Cream the butter and icing sugar together
- Add the mascarpone and hazelnut and mix slowly until combined
Strawberry Filling
Ingredients
5 large strawberries
1/4 cup sugar
Method
- Cut strawberries into small pieces and place in a saucepan
- Add sugar
- Heat till thick
Luke’s Dish: Vol Au Vent
Rough Puff
Ingredients
1 1/2 cup flour
1 cup cold butter
1/2 tsp salt
3 tbsp cold water- add more water if needed
Method
- Grate half of the butter and place it in the freezer
- Cube the other half of butter and add it to the flour and salt, roughly combine
- Add water and form a dough
- Place in the fridge for 10 min
- Roll out the dough and add 1/3 of the frozen grated butter evenly in a centre strip of the pastry and fold the sides over
- Roll out the dough again and fold the same way
- Place in the fridge for 10 min
- And repeat until all the grated butter has been added
Vol Au Vent
- Roll out the pastry
- Cut out circles
- In half of the circles, cut a smaller circle inside
- Place a full circle and a cut circle on top of each other and brush with egg wash
- Bake for 5-7 min at 180 degrees Celsius
Chicken and Mushroom Filling
Ingredients
1 chicken breast
2 mushrooms
1 tbsp butter
1 tbsp olive oil
1/2 tsp garlic
1 tbsp flour
Pinch of pepper
Pinch of paprika
1/2 tsp mustard seeds
Salt
1 tbsp cream
Method
- Cut chicken into tiny pieces and fry
- Cut mushrooms and add to chicken
- Add the olive oil, butter and garlic to chicken
- Once melted mix in the flour
- Add spiced
- Add cream
- Remove from heat and spoon into vol au vent shells
My Memory Dish: Pastéis de Nata
Syrup
Ingredients
100g sugar
1 strip lemon zest
1 cinnamon stick
100ml water
Method
- Place in a boil and let simmer for a few min, until sugar is dissolved
Custard
Ingredients
1 egg
2 egg yolks
25g cornflour
250ml milk
2 tsp vanilla essence
1/2 tsp cinnamon
Method
- Heat up the milk
- Combine the eggs, vanilla, cinnamon and cornflour
- Slowly add the milk to the egg mixture, mixing constantly
- Transfer back to the heat and mix until thick
- Add in the syrup
- Roll out the rough puff pastry using a little bit of icing sugar
- Roll the dough into a spiral and cut into discs
- Flatten then discs and place into muffin tray
- Add custard
- And bake for 15 min or until custard has browned, at 180 degrees Celsius
Cookie Crumb
Ingredients
1/4 cup flour
1/4 cup sugar
4 tbsp butter
1 tsp salt
Method
- Rub all the ingredients together until crumb is formed
- Bake for 10 min at 180 degrees Celsius
