Masala Panko Deep Fried Prawns

With cucumber & cherry tomatoes served with a creamy honey & lime dressing

INGREDIENTS

6 x prawns with shell
1 tsp thai spice from Food Lover’s Market
1 tsp masala 
4 tbs corn flour 
4 tbs normal flour 
salt and pepper to season 
1 egg
¼ cup panko & ¼ cup normal bread crumbs
Clover Olive Pride Olive Oil
½ cucumber 
Handful of cherry tomatoes 
4 tbs Clover plain yogurt 
2 tbs honey 
2 tbs lime juice 
½ zest of lime
coriander 
1 tsp crushed garlic
2 tbs Clover butter
2 tbs mixed herbs

METHOD

  1. Marinate prawns with thai spice, masala and lime juice.
  2. Spice flour with salt, pepper and mixed herbs, coat prawns in both corn and normal flour.
  3. Dip in beaten egg and dip in panko & normal bread crumbs.
  4. Deep fry in clover olive pride & drain on paper towel
  5. Peel and season cucumber and roll
  6. Cut cherry tomatoes and season
  7. Make dressing , blend greek yogurt, honey, lime juice, coriander & a drizzle of virgin olive oil.
  8. Plate & garnish accordingly
