Mabontle’s Hot Rooibos Pudding

MABONTLE'S HOT ROOIBOS PUDDING

INGREDIENTS

Pudding

  • 2 eggs 
  • ½ cup of brown sugar 
  • 2 tablespoons of apricot  jam
  • 1 teaspoon of vanilla essence 
  • 2 tsp of baking powder 
  • 2 cups of flour 
  • Pinch of salt 
  • 150 ml Clover milk 
  • 1 teaspoon 

Rooibos Sauce

  • 3 tablespoons of Clover butter 
  • 70 ml water 
  • Half a cup of sugar 
  • 2 tsp of vanilla essence 
  • Rooibos tea bag 
  • 130 ml Clover cream

 

HOW TO MAKE

Pudding

  • Cream the butter and sugar together till smooth
  •  
  • Add the jam and make sure it’s well Incorporated with the creamed butter and suga 
  •  
  • after that add 2 eggs and one teaspoon of vanilla essence 
  •  
  • Slowly add the flour to the mixture, followed by the remaining dry ingredients, incorporating as you go.
  •  
  • Add the Clover milk and your vinegar and incorporate 
  •  
  • Grease a casserole dish and bake at 180 for 30-35 minutes.

 Rooibos Sauce

 

  • Start with a saucepan on low heat add the  butter, sugar and water at the same time and wait to melt and start to bubble.
  • When boiling, add your cream and vanilla essence and wait for it to boil again.
  • When everything in the pan is boiling then add the rooibos tea bag and let it simmer for 10-15 minutes.
  • When the rooibos is now well incorporated in the mixture remove it from the heat and pour over the pudding.
  • Serve and enjoy
