
MABONTLE'S HOT ROOIBOS PUDDING

INGREDIENTS
Pudding
- 2 eggs
- ½ cup of brown sugar
- 2 tablespoons of apricot jam
- 1 teaspoon of vanilla essence
- 2 tsp of baking powder
- 2 cups of flour
- Pinch of salt
- 150 ml Clover milk
- 1 teaspoon
Rooibos Sauce
- 3 tablespoons of Clover butter
- 70 ml water
- Half a cup of sugar
- 2 tsp of vanilla essence
- Rooibos tea bag
- 130 ml Clover cream
HOW TO MAKE
Pudding
- Cream the butter and sugar together till smooth
- Add the jam and make sure it’s well Incorporated with the creamed butter and suga
- after that add 2 eggs and one teaspoon of vanilla essence
- Slowly add the flour to the mixture, followed by the remaining dry ingredients, incorporating as you go.
- Add the Clover milk and your vinegar and incorporate
- Grease a casserole dish and bake at 180 for 30-35 minutes.
Rooibos Sauce
- Start with a saucepan on low heat add the butter, sugar and water at the same time and wait to melt and start to bubble.
- When boiling, add your cream and vanilla essence and wait for it to boil again.
- When everything in the pan is boiling then add the rooibos tea bag and let it simmer for 10-15 minutes.
- When the rooibos is now well incorporated in the mixture remove it from the heat and pour over the pudding.
- Serve and enjoy
