
Lieschen and Quinley's Milktart Cupcakes

INGREDIENTS
Cupcakes
- 1¼ cup flour
- 1¼ tsp baking powder
- ½ tsp salt
- ½ cup Clover unsalted butter, room temp
- ¾ cup sugar
- 2 large eggs, room temp
- 2 tsp vanilla extract
- ½ cup Clover maas
Filling
- 500ml Clover Full Cream Milk
- 1 can Clover Condensed Milk
- 25g Clover Unsalted Butter
- 2 eggs
- 3 tbsp cornflour
- 2 tbsp sugar
- 1 tsp vanilla
HOW TO MAKE
For cupcakes
- Preheat oven at 180°C
- Cream butter and sugar on high on a standmix or handmixer until light and creamy.
- In a separate bowl, sift all the dry ingredients.
- FOLD dry ingredients to creamed butter and suger MIXTURE. DO NOT OVER MIX.
- Add in your Clover Maas
- Line your cupcake pan with cupcake cups, fill them about ¾ full.
- Bake at 180°C for at 15 minutes.
- Allow the cupcakes to cool for at least 10-15 minutes.
For filling
- Add milk, condensed milk and butter into a saucepan on low. Allow the mixture to simmer until butter is melted.
- In a separate bowl, whisk eggs, corn flour, sugar and vanilla extract until all incorporated
- And egg-corn flour-sugar-vanilla mixture into the saucepan with the condensed milk mixture.
- Keep heat on medium and whisk until the mixture is thickened.
- Remove from heat and cover with plastic wrap and refrigerate.
