Jahzara’s Family Soji Pudding

JAHZARA'S FAMILY SOJI PUDDING

Get Jahzara’s Family Soji Pudding recipe from The Taste Master Junior Season 1 Episode 4

Ingredients:

  • Pudding

1/2 tsp of yellow food colouring

1 egg yolk

1 cup of semolina (tasty wheat)

1/2 cup Cremora

100g of room temperature Clover butter

1/2 cup of Clover condensed milk

1/2 cup of Clover milk

1 cup of boiled water

  • Custard

1 cup Clover custard

1 cup Fresh Clover cream

Saffron

1 tsp cinnamon powder

1 tsp cardamom powder

  •  For Plating

Toasted almond flakes

Red and green food colouring

Toasted and blended pistachios

How to make Soji Pudding:

 

  • Pudding

In a pan, toast the semolina and spices

Separately combine the water and Cremora

Add the yellow food colouring, milk and egg yolk to the Water and Cremora mixture and mix to combine

Add the room temperature Clover butter to the Semolina and mix to combine

Combine the two mixtures and add water as needed

Add and mix in the Clover condensed milk

  • Custard

Simmer the Clover cream with the ground cardamom, cinnamon and saffron until fragrant

Add the Clover custard and bring to a boil while stirring

Set aside 3/4 cup of the mixture for the pudding 

Thicken the remaining custard with 1 tbsp of cornstarch for the plating

  • Plating

Use the red and green food colouring to dye the toasted almond flakes 

Arrange the flakes with the crushed pistachios on top of the pudding

Garnish and smear with the infused custard
