Jahzara and Markus’ Tropika Cake
Sponge Recipe:
(20 cm x47)
– 600g Self Raising Flour
– 1/4 tsp Sea Salt
– 180g Buttermilk
– 1 tbsp Vanilla Extract
– 9 Large Eggs
– 420g Softened Unsalted Butter
– 180g Vegetable oil
– 525g caster sugar
- Preheat oven 175C
- Grease pans
- Sift Flour & Salt
- Mix vanilla & buttermilk
- Cream butter, oil & sugar, till pale
- Add eggs gradually
- Scrape sides
- Add dry on low, alternate. Add buttermillk mix
- Scrape and fold batter add colouring and fruit escense.
- Distribute, level, bake for 26-28 or till a skewer comes out clean.
Berry Compote:
– 3/4 cup raspberry
– 3/4 cup strawberry
– 3/4 cup bluberry
– 3/4 cup sugar
– 1/4 water
- Boil mixture until thick.
- Cover and allow to cool.
Berry Jelly:
– 1 packet Strawberry jelly
– 1 packet Raspberry jelly
– 1/2 packet lemon jelly
– Boiling water
– Cold water
– Finely chopped raspberry, blueberry, and strawberry
- Mix jelly with hot water and then add the cold.
- Add fruit and freeze.
- Cut into cubes.
