JAHZARA AND GABBY'S CHEESECAKE BROWNIES

INGREDIENTS

Brownie

  • 25 cm square tin (25×25)
  • 220g Dark chocolate 70%
  • 220g unsalted Butter
  • 440g caster sugar
  • 4 eggs 
  • 60g Cocoa Powder
  • 80g Plain flour
  • 3/4 tsp Baking Powder
  • 3/4 tsp Salt

Cheesecake mix (on top)

  • 500g cream cheese
  • 110g caster sugar
  • 2 Eggs
  • 1/2 tsp vanilla Extract

HOW TO MAKE

Brownies

  • Grease and line tray (2 long pieces).
  • Melt chocolate & butter.
  • Whisk sugar and egg till pale.
  • Pour chocolate mix into the egg mix and whisk on low.
  • Add flour, cocoa powder, baking powder, and salt; whisk until combined.
  • Scrape sides and mix.
  • Save a little bit of brownie batter for swirl.
  • Add cream cheese and sugar, eggs, and vanilla and mix for 4-5 min 
  • Spread cheesecake batter onto the brownies.
  • Add 1 tsp of boiled water to saved brownie batter.
  • Dollop, swirl, and bake at 175c (fan) 30-35 minutes.

Caramel

  • Boil sugar and water till a light amber colour is visible.
  • Add butter and cream.
