Bacon and Maple Syrup Cookies and Hot Spiced Bourbon Milk Punch

Bacon and Maple Cookies

Ingredients

113g melted unsalted butter
150g light brown Sugar
170g Castor Sugar
1 tsp Vanilla paste
2 large Eggs
375g Flour
2 TB Cornflour
1 tsp Bicarb
1 tsp Salt
250 g Smoked Back Bacon
12 tbs Dark Maple syrup

Method

  1. Oven at 165’C
  2. Line 2 Cookie Trays with Baking Paper.
  3. Fry bacon until cooked and crispy
    add 6 tbsp of maple syrup to bacon towards the end of cooking.
  4. Beat with Handmixer on low
    Melted Butter, both sugars, maple syrup add vanilla paste, plus eggs – beat until well incorporated.
  5. Add dry ingredients and mix
  6. Scoop dough into large balls (3 tbsp) Use extra large ice cream scoops in balls.
  7. Bake for 12-13 min until fluffy, just starting to brown.

Whipped Brie with Toasted Walnut and Maple Syrup 

Ingredients

3 wheels Brie cheese, cold
Chopped roasted Walnuts
Maldon Salt

Method

  1. Using a serrated knife, remove the entire rind from each wheel of Brie. Let the cheese come to room temp then add it to the bowl of a stand mixer fitted with a paddle attachment.
  2. Beat the cheese on medium speed until it becomes smooth and creamy, scraping down the sides as needed, about 10 minutes.
  3. Transfer the whipped Brie to a serving plate then drizzle the
  4. Leftover Bacon Maple Syrup and drizzle over finished brie.
  5. Add nuts to taste with Salt

Hot Spiced Bourbon Milk Punch

Ingredients

4 Cups Milk
2 Cinnamon Sticks
180 ml Bourbon
2 tsp Vanilla Paste
4 Tbsp Maple Syrup
16 Allspice Berries
1 tsp Nutmeg

Method

  1. Pour milk in saucepan
  2. Add spices and maple syrup.
  3. On medium heat, warm milk until steaming., or start bubbling on the edges not boiling.
  4. Take off and steep 10 min
  5. Add Bourbon stir in vanilla paste.
  6. Strain out spices.
  7. Serve hot
