Charné's Sweet Apple Pie, Chips and Caramel Gravy

Rough Puff Pastry

500g butter
500g flour
1cup water
5ml royal baking powder

  1. Rub the flour, butter and baking powder together until it forms big crumbs, roll out the pastry, fold out the pastry onto itself in 3rds, do that twice, rest in the fridge for a half an hour, then fold again twice, rest and use as desired.

Apple Filling

600g apples (cored,skin removed and cut in blocks)
150g sugar
4cm wide fresh ginger(chopped up)
5ml ground cinnamon
20g butter
Boil together until it’s thick

Apple Chips

Peel and slice 5 apples
Toss it in cinnamon sugar,
And bake in the oven for 40min at 180°c


250g sugar
10ml water
100g fresh cream

  1. Caramelize the water and sugar until the desired color, add the fresh cream and whisk
