Gabriella’s Greek Coconut Pudding

Ingredients:
Pudding:
125 g Clover butter
1 cup sugar
4 eggs
2 cups desiccated coconut
1 cup flour
1 tbsp Royal Baking powder
Syrup:
1 cup water
1 cup sugar
4 lemon rind
How to make Greek Coconut Pudding:
- Cream your butter and sugar together until light and fluffy
- Slowly incorporate your eggs, flour and baking powder
- Mix in your desiccated coconut
- Pour batter into ramekins and bake at 180 degrees until baked through
- Poke holes in the top and drizzle your syrup over the top and let soak in
- Serve warm with a side of Clover Custard
