Vanilla Sponge

500g sugar
500g flour
50g Royal Baking Powder
315g oil
315g boiling water
10 eggs
15 vanilla essence

  1. Beat the sugar and eggs.
  2. Add the flour, royal baking powder and oil, mix till its smooth.
  3. Add in the boiling water
  4. Bake at 170°c

Vegan American Meringue Buttercream

450g Vegan Butter
550g Icing Sugar
2tsp Vanilla
125ml Aquafaba (Brine from a can of chickpeas)
Juice of one lemon

  1. Cream Butter
  2. Sieve icing sugar and add to the butter.
  3. Mix until smooth consistency.
  4. Add vanilla and mix.
  5. Then add aquafaba (small amounts at a time).
  6. Blend for +/- 5min.

Berry Compote

500g Mixed Berries
1/3 cup castor sugar
Juice of 1/2 lemon
10 mint leaves chopped
