Vanilla Sponge
500g sugar
500g flour
50g Royal Baking Powder
315g oil
315g boiling water
10 eggs
15 vanilla essence
- Beat the sugar and eggs.
- Add the flour, royal baking powder and oil, mix till its smooth.
- Add in the boiling water
- Bake at 170°c
Vegan American Meringue Buttercream
450g Vegan Butter
550g Icing Sugar
2tsp Vanilla
125ml Aquafaba (Brine from a can of chickpeas)
Juice of one lemon
- Cream Butter
- Sieve icing sugar and add to the butter.
- Mix until smooth consistency.
- Add vanilla and mix.
- Then add aquafaba (small amounts at a time).
- Blend for +/- 5min.
Berry Compote
500g Mixed Berries
1/3 cup castor sugar
Juice of 1/2 lemon
10 mint leaves chopped
