Molly's Hors D'oeuvres

Lemon Meringue
Base
3/4 cup sugar
1 cup butter
1 egg
3 cup flour
1 tsp Royal Baking Powder
Method
- Cream the butter and sugar together
- Add the egg and mix
- Sift in the flour and baking powder
- Mix until a dough forms
- Press into a mini muffin tray
- Bake for 5-7 min at 170 degrees celsius
Filling
Ingredients
1 tin condensed milk
3 egg yolks
1/2 cup lemon juice
Method
- Mix all the ingredients together
Spoon into the biscuit base
Bake for 5 min at 170 degrees celsius
Meringue
Ingredients
3 egg whites
1 1/4 cup sugar
1/4 cup water
Method
- Place water and sugar in a saucepan and heat
- Whip egg whites till soft peaks
- When sugar starts boiling remove from the heat
- While whisking the egg whites slowly pour in the hot sugar and continue whisking until stiff peaks have formed
Brownie with Peanut Butter Cream Cheese Frosting
Brownie
Ingredients
1 cup oil
2 cup sugar
1 cup cocoa powder
4 eggs
1 1/2 cup flour
1 tsp baking powder
1 tsp vanilla essence
Method
- Mix oil, sugar and cocoa together
Add the eggs and mix
Sift in the flour and baking powder
Add the vanilla essence and mix
Place in a baking tray and bake for 15-20 min at 180 degrees Celsius
Frosting
Ingredients
1/2 cup melted peanut butter
250g cream cheese
1/2 cup icing sugar
Method
- Mix together till smooth
- Pipe onto cold brownies
Cornbread with Cottage Cheese Topping and Salsa
Cornbread
Ingredients
1 1/4 cup flour
1 cup polenta
1/4 cup sugar
1 tbsp Royal Baking Powder
1/4 tsp salt
1 tbsp paprika
1 tsp cloves
1/4 cup butter
1 can creamed corn
2 eggs
1/3 cup milk
Method
- Cream butter sugar, add creamed corn and mix
- Whisk eggs and milk together in a bowl
- Mix flour, polenta and spices in a separate bowl
- Add liquid and flour mixture into corn mixture slowly
- Place in muffin tray
Bake for 10 min at 180 degrees
Cottage Cheese Topping
Ingredients
240g Cottage cheese
Salt
Dill
Method
- Mix together
- Place in a piping bag
- Piping a circle on top of the sweet corn
Tomato Salsa
Ingredients
1 tomato
1 chilli
1 garlic clove
1 tsp Lemon juice
Pinch of salt
Method
- Blend in a food processor
Falafels with Cream Cheese Tzatziki
Falafels
Ingredients
2 can chickpeas
1 onion
1 garlic clove
1 tbsp cumin
1 chilli
1 tsp salt
Mixed herbs
1/2 tbsp chickpea flour
2 tsp baking powder
Method
- Blend in a food processor
- Spoon and roll into little balls
- Fry in little bit of oil
Tzatziki
Ingredients
100g cream cheese
1 tbsp yoghurt
Dill
1 tbsp cumber
1/2 tsp salt
1 tsp cut garlic
1 tsp black pepper
Olives
Method
- Cream the cream cheese and yoghurt together
- Grate the cucumber and pat it dry
- Add the cucumber, dill, garlic, salt and pepper to yoghurt mixture
- Pipe onto falafel and place olive on top with a toothpick through
Blinis
Crumpet
Ingredients
1 1/2 cups flour
2 tbsp sugar
1 tbsp baking powder
Pinch of salt
1/4 cup butter
1 1/4 cup milk
2 eggs
Method
- Sift flour, sugar, salt and baking powder
- Crumble in the butter until wet sand texture
- Mix milk and eggs in a bowl
- Add egg mixture into flour mixture
- Mix
- Fry small circles
Topping
Ingredients
100g Cream cheese
Dill
Salmon
Lemon juice
Black pepper
Salt
Olives
Method
- Pipe on the cream cheese
- Sprinkle the lemon juice on the salmon
- Place the salmon on the cream cheese
- Sprinkle black pepper on top
- Add dill on top
- Add a 1/4 of the olive
