Molly's Hors D'oeuvres

Lemon Meringue

Base

3/4 cup sugar
1 cup butter
1 egg
3 cup flour
1 tsp Royal Baking Powder

Method

  1. Cream the butter and sugar together
  2. Add the egg and mix
  3. Sift in the flour and baking powder
  4. Mix until a dough forms
  5. Press into a mini muffin tray
  6. Bake for 5-7 min at 170 degrees celsius

Filling

Ingredients

1 tin condensed milk
3 egg yolks
1/2 cup lemon juice

Method

  1. Mix all the ingredients together
    Spoon into the biscuit base
    Bake for 5 min at 170 degrees celsius

Meringue

Ingredients

3 egg whites
1 1/4 cup sugar
1/4 cup water

Method

  1. Place water and sugar in a saucepan and heat
  2. Whip egg whites till soft peaks
  3. When sugar starts boiling remove from the heat
  4. While whisking the egg whites slowly pour in the hot sugar and continue whisking until stiff peaks have formed

Brownie with Peanut Butter Cream Cheese Frosting

Brownie

Ingredients

1 cup oil
2 cup sugar
1 cup cocoa powder
4 eggs
1 1/2 cup flour
1 tsp baking powder
1 tsp vanilla essence

Method

  1. Mix oil, sugar and cocoa together
    Add the eggs and mix
    Sift in the flour and baking powder
    Add the vanilla essence and mix
    Place in a baking tray and bake for 15-20 min at 180 degrees Celsius

Frosting

Ingredients

1/2 cup melted peanut butter
250g cream cheese
1/2 cup icing sugar

Method

  1. Mix together till smooth
  2. Pipe onto cold brownies

Cornbread with Cottage Cheese Topping and Salsa

Cornbread

Ingredients

1 1/4 cup flour
1 cup polenta
1/4 cup sugar
1 tbsp Royal Baking Powder
1/4 tsp salt
1 tbsp paprika
1 tsp cloves
1/4 cup butter
1 can creamed corn
2 eggs
1/3 cup milk

Method

  1. Cream butter sugar, add creamed corn and mix
  2. Whisk eggs and milk together in a bowl
  3. Mix flour, polenta and spices in a separate bowl
  4. Add liquid and flour mixture into corn mixture slowly
  5. Place in muffin tray
    Bake for 10 min at 180 degrees

Cottage Cheese Topping

Ingredients

240g Cottage cheese
Salt
Dill

Method

  1. Mix together
  2. Place in a piping bag
  3. Piping a circle on top of the sweet corn

Tomato Salsa

Ingredients

1 tomato
1 chilli
1 garlic clove
1 tsp Lemon juice
Pinch of salt

Method

  1. Blend in a food processor

Falafels with Cream Cheese Tzatziki

Falafels

Ingredients

2 can chickpeas
1 onion
1 garlic clove
1 tbsp cumin
1 chilli
1 tsp salt
Mixed herbs
1/2 tbsp chickpea flour
2 tsp baking powder

Method

  1. Blend in a food processor
  2. Spoon and roll into little balls
  3. Fry in little bit of oil

Tzatziki

Ingredients

100g cream cheese
1 tbsp yoghurt
Dill
1 tbsp cumber
1/2 tsp salt
1 tsp cut garlic
1 tsp black pepper
Olives

Method

  1. Cream the cream cheese and yoghurt together
  2. Grate the cucumber and pat it dry
  3. Add the cucumber, dill, garlic, salt and pepper to yoghurt mixture
  4. Pipe onto falafel and place olive on top with a toothpick through

Blinis

Crumpet

Ingredients

1 1/2 cups flour
2 tbsp sugar
1 tbsp baking powder
Pinch of salt
1/4 cup butter
1 1/4 cup milk
2 eggs

Method

  1. Sift flour, sugar, salt and baking powder
  2. Crumble in the butter until wet sand texture
  3. Mix milk and eggs in a bowl
  4. Add egg mixture into flour mixture
  5. Mix
  6. Fry small circles

Topping

Ingredients

100g Cream cheese
Dill
Salmon
Lemon juice
Black pepper
Salt
Olives

Method

  1. Pipe on the cream cheese
  2. Sprinkle the lemon juice on the salmon
  3. Place the salmon on the cream cheese
  4. Sprinkle black pepper on top
  5. Add dill on top
  6. Add a 1/4 of the olive
