Nondumiso's Masterclass Vegan Hertzoggie

Hertzoggie
2 cups flour
250 g sugar
1 tsp baking powder
Pinch of salt
1 cup vegan butter
1 cup apple sauce
1 cup aquafaba
1 tsp vanilla essence
1.5 cup of desiccated coconut
Apricot jam for filling
Base and Filling:
- Preheat the oven to 180° C.
- Grease the muffin tray.
- Add flour, 150 g of sugar, baking powder, salt, butter, apple source to a large bowl.
- Mix ingredients until we’ll incorporated.
- Divide dough into the muffin tray.
- Add about a ¼ tsp of jam into the dough. (You may also use a berry compote as the filling).
Topping:
- Beat the aquafaba using an electric whisk until the aquafaba forms soft peaks.
- Fold vanilla essence and 100 g of sugar into the aquafaba.
- Fold desiccated coconut into the aquafaba mix.
- Put about a spoon of the aquafaba mix on top of the jam filling so that the aquafaba mix covers the jam filling.
- Bake for about 20 minutes.
- May enjoy warm or cold.
