LAMB & WAGYU BURGER

With a spicy tomato relish, a rainbow slaw and mint, chilli and mayo dip.

LAMB & WAGYU PATTY

Preparation time: 15 min
Rest time: 5 min 
Cooking time: 5 min per side 

400g lamb mince 400g wagyu mince
A handful of chopped coriander 
A handful chopped mint
A handful of spring onion finely chopped
1 tsp chilli flakes
1 tsp garlic powder
1 tsp kashmiri masala
1 tsp garam masala
2 tsp Thai 7 spice from Food Lover’s Market
Black pepper 
2 x eggs to combine
Grated Clover gouda cheese for inside of patty

Method 

  1. Finely chop all ingredients and add to mince meat
  2. Add spices
  3. Add egg to combine 
  4. Shape and mould patties with cheese in the centre
  5. Fry for 5 mins on each side
  6. Allow to rest

Enriched homemade burger buns

Preparation time: 20 min
1st proofing time : 1 hr
2nd  proof : 25 min
Bake time : 15 min

3 cups flour 
2 ¼ tsp yeast 
2 tbs sugar 
¾ tbs melted Clover butter 
2 large eggs  
1 tsp salt 
1 cup warm Clover milk
Onion seeds 

Method 

  1. Activate the yeast in the bowl, combine warm milk, sugar and yeast.
  2. Allow to sit for about 5 – 10 min until frothy.
  3. Slowly add in flour and salt to the stand mixer.
  4. Combine the butter and yeast mixture.
  5. Add the milk, butter & yeast mixture to flour.
  6. Add beaten egg.
  7. Mix on medium speed until a dough forms.
  8. Mix for 5 – 7 mins until the bowl shakes.
  9. Place the dough in a greased bowl & cover with a wet cloth for 1st proofing.
  10. After the 1st proof, shape the buns: Punch down risen dough, divide into equal parts.
  11. Shape each piece into a ball & place on baking sheet.
  12. 2nd rise cover shaped buns with a wet cloth for 15 – 20 min until double in size.
  13. Brush egg and water.
  14. Add onion seds.
  15. Bake on 190 for 15 – 20min until brown.

Spicy tomato relish

Preparation time: 5 min
Cooking time : 10 min

Diced onion 
2 x tomatoes 
1 x red chillies
Chopped garlic 
1 tsp Kashmiri masala
½ tsp crushed chilli 
1 tsp sugar 
A squeeze of lemon

Method 

  1.   Add olive oil & garlic & red chilli
  2.   Fry chopped tomato and onion 
  3.   Add spices
  4. Add sugar & lemon juice & reduce.

 

Rainbow slaw

Red cabbage 
Carrot
Coriander 
Spinach

Method 

  1. Finely chop the red cabbage, carrot, coriander and spinach.

Chilli and mint dip

Fresh mint
Fresh coriander
1 x garlic clove
Cumin seeds
1 x green chilli 
2 tbs Clover Authenikos Greek Style Yoghurt
1 tbs tangy mayo
1 tbs Clover creamy mayo
 A squeeze of lemon
Add salt to taste  

Method

  1. Blend mint, coriander, cumin seeds and garlic clove, chilli  and lemon.
  2. add Greek yogurt 
  3. add mayo & salt
