Lwazi’s Tiramisu Cake

Vanilla Sponge Cake
Cake flour – 125ml (1/2 cup)
Castor sugar – 125ml (1/2 cup)
Baking powder – 5ml (1tsp)
Pinch of salt
Eggs (separated) – 4
Cooking oil – 40ml
Maas – 60ml
Vanilla essence – 5ml
Method:
Preheat oven to 180 degrees and line your baking tray with grease proof paper
Sieve all dry ingredients into a medium mixing bowl and in 2 separate mixing separate your eggs
Mix together your egg yolks, Maas, cooking oil and vanilla essence then mix into your dry ingredients and mix till combined
Whip your egg whites to stiff peak and fold into your batter
Pour your batter into your prepped baking tray and bake for 12mins then allow your cake to cool down at room temperature
Tiramisu Filling
Mascarpone – 250ml (1 cup)
Cream – 80ml
Egg yolk – 1
Kahlúa – 30ml
Strong coffee – 15ml + extra for dipping your sponge
Method:
Whip all ingredients together and pour into a piping bag then all to set in the fridge for at least 2 hours or overnight
Assembling the cake:
Cut your cake into 3 equal parts then dip into the coffee,spread the filling between the 2 layers and pipe on top of the last layer and grate some dark chocolate and sprinkle on top
Cut into 3 – 4 portions
