Apple Cinnamon Roll with Maple Frosting and Loaded Focaccia Sandwich

Facaccia
Ingredients
4 cups flour
2 tsp salt
10g instant yeast
2 tbsp sugar
1/2 cup olive oil
2 cups lukewarm water
5 cut olives
Method
- Place the flour, sugar, salt and yeast in a bowl
- Add the olive oil and rub in with your fingers (this creates a soft texture to the bread)
- Add the water and mix until not sticky anymore
- Oil a tray and let sit for 15 min and then fold over itself
- Let sit for another 20 min
- Place in baking tin and let sit for another 20 min
- Pour a little bit of olive oil on top and slowly press fingers into the dough place olives on top
- Bake for 30 min and 170 degrees Celsius
Apple Filling
Ingredients
3 apples
1 tbsp cinnamon
1 tbsp honey
Method
- Peel and grate the apples
- Place grated apple, cinnamon and honey in a saucepan and cook down
- Let cool
Chicken Sauce
Ingredients
1 tbsp olive oil
1 tbsp honey
1 tsp chilli flakes
1 tsp garlic
1 tbsp soya sauce
Method
- Place in a saucepan and simmer until slightly thick
Chicken
Ingredients
2 chicken breast
1 bay leaf
5 whole cloves
Method
- Boil the chicken in water spices
- For about 5 min
- Remove from water and shred using 2 forks
- It is ok for the chicken to be slightly pink because it will be cooked again
- Place the shredded chicken and chicken sauce in a pan and fry together
Mayo
Ingredients
1 egg
2 cups vegetable oil
1 tbsp lemon juice
1 tsp mustard
1/2 tsp salt
Method
- In a bowl add egg, mustard and lemon juice
- With a stick blender blend egg mixture and very slowly add in the oil
Pickles
Ingredients
1 tsp mustard seeds
1 tsp cumin seeds
1 tbsp brown sugar
1 cup water
1 cup vinegar
Half a cucumber
Method
- Cut the cucumber into thin slices
- Add water, vinegar, mustard seeds, cumin and sugar to a pot and heat until sugar is dissolved and removed from heat
- Add in the cucumber and let sit
Maple Icing
Ingredients
50g butter
110g cream cheese
1/4 cup maple syrup
1/2 cup icing sugar
Method
- Cream everything together
