A Tour of Winelands Tastes Cheese Board

Olive Oil and Pepper Crackers

Ingredients

1 cup flour
1 tbsp olive oil
1/2 cup warm water
1 tsp salt
1 tsp chilli powder
1/2 tsp pepper

Method

  1. In a food processor or a stand mixer mix dry ingredients. Add oil and slowly drizzle in water until a ball forms. Divide into 2 and cover with a bowl to rest for 10 minutes.
  2. Lightly flour a surface. Roll out dough until quite thin and transfer to a greased baking pan. Brush with oil and sprinkle with seeds and pepper.
  3. Cut into cracker shape with a pizza cutter. Bake for 10 minutes at 180 degrees.

Roasted Grapes and Tomatoes

Ingredients

2 cups of grapes
1 cup tomatoes
1 tbsp honey
4 tbsp olive oil
Thyme
Seasoning

Method

  1. Combine ingredients in a roasting dish and roast at 150 degrees for 45 minutes, turning every 15 minutes.

Walnut and Lentil Pate

Ingredients

1 can drained lentils
3/4 cup roasted walnuts
2 tbsp olive oil
2 chopped shallots, gently sautéed
2 cloves of garlic, gently sautéed
2 tsp thyme
1 tbsp vinegar
2 tsp lemon juice
1/2 salt
pepper

Method

  1. Combine ingredients in a food processor and blitz. Stop periodically to scrape down sides. Taste and adjust seasoning accordingly.

Bacon Onion Marmelade

Ingredients

1 pack of bacon, chopped up
1 large onion, finely chopped
2 cloves garlic, minced
½ cup (100 g) brown sugar
⅓ cup (79 g) apple cider vinegar
1 teaspoon chili powder, optional
Herbs like thyme and rosemary

Method

  1. In a medium saucepan over medium heat, cook bacon until crispy. Once cooked, remove bacon from the pan and add onion. Sauté in bacon fat. Add garlic and spices. Add sugar and vinegar and cook over low heat for 20 mins. Add bacon and any remaining ingredients and cook over low heat for 30 minutes. Adjust to taste and enjoy!
