INGREDIENTS

Bacon and Onion Jam

  • 200 g bacon, diced
  • ½ onion, diced
  • 1 clove garlic, minced
  • ¼ cup brown sugar
  • 2 tablespoons maple syrup
  • 40 ml apple cider vinegar
  • ½ teaspoon chili powder

Beef Patty

  • 500 g beef mince
  • 1 tablespoon Worcestershire sauce
  • ½ tablespoon soy sauce
  • ½ teaspoon onion powder
  • ½ teaspoon garlic powder
  • ½ teaspoon paprika
  • ½ teaspoon salt
  • Pinch of black pepper
  • 1 slice of bread, crumbed

Burger Sauce

  • ½ cup Clover mayonnaise
  • ¼ cup tomato sauce (ketchup)
  • 2 teaspoons sriracha
  • 1 tablespoon mustard
  • 1 tablespoon gherkin juice
Assembly
  • Burger buns
  • Lettuce
  • Clover white cheddar cheese slices

METHOD

Onion and Bacon Jam

  • In a skillet, cook the diced bacon over medium heat until it begins to crisp. Just before it reaches your desired crispiness, add a splash of water to the pan and remove the bacon from the skillet.
  • Using the bacon fat left in the pan, sauté the diced onion until translucent.
  • Add the minced garlic and cook for an additional minute.
  • Return the cooked bacon to the pan and stir in the brown sugar, maple syrup, apple cider vinegar, and chili powder.
  • Let the mixture simmer, stirring occasionally, until it thickens and forms a jam-like consistency.

Beef Patty

  • In a large mixing bowl, combine the beef mince with Worcestershire sauce, soy sauce, onion powder, garlic powder, paprika, salt, black pepper, and crumbled bread.
  • Mix until just combined, being careful not to overwork the meat.
  • Shape the mixture into patties, making them slightly larger than the burger buns to allow for shrinkage during cooking.

Burger Sauce

  1. In a small bowl, combine the mayonnaise, tomato sauce, sriracha, mustard, and gherkin juice.
  2. Stir until well mixed and set aside.
Assembly
  • Start by placing a spoonful of burger sauce on the bottom bun.
  • Layer with fresh lettuce, followed by the beef patty and a slice of white cheddar cheese.
  • Generously top with the bacon and onion jam.
  • Drizzle with additional burger sauce, then place the top bun on to finish.
