ChewMe’s Tabouleh Salad with Honey Poached Egg Yolks and Sole

Serves 2

250g bulgar wheat
400g water
100g honey
40g chopped coriander
20g chopped Italian parsley
Salt and pepper to taste

Selection of seasonal of your choice roasted or pan fried depending on your preference. I pan friend and honey glazed the carrots and just boiled the baby beets.

2 springs lavender
2 cups water
10g lime leaves
1tsp lime zest
50g honey
25ml lime juice
1 egg yolk
250g olive oil
Salt and pepper to taste

2 fillets sole
Salt and pepper to taste
Smoking chips

Honey poached egg yolks
4 egg yolks
250ml water
125ml honey
Sea salt flakes


Bulgar wheat
In a saucepan, boil water and honey on a high heat until honey is fully dissolved and liquid is bubbling. Add bulgar wheat and and turn heat to medium. Simmer until fully cooked. Remove from heat and cool down completely. Once cooled add chopped herbs and set aside.

In a saucepan, boil lavender and lime leaves for 10 minutes then remove from heat. Strain liquid and taste. Liquid will be bitter but potent in flavour. In a blender add lime juice and zest, a ⅓ of the lavender liquid, egg yolk and honey. Blender while adding olive oil slowly to thicken. Only add a little at a time as you do not want a thick consistency but a dressing. Add salt and pepper to taste.

Cold smoke the raw fish to get a subtle smokey flavour. DO NOT OVERSMOKE!
Pan fry fish on medium heat until golden and crispy but soft. Season as you go.

Honey poached yolks
Heat water and honey in a saucepan making sure not to boil the liquid but simmer. Drop individual yolks into liquid and cook to desired temperature ie. Soft, medium or hard. Set aside on a bed of honey and sprinkle a pinch of sea salt onto each yolk.

Assemble dish by mixing in the dressing( or you can add the dressing after)then topping with all the roast veggies and sole. Place the eggs last then garnish with fresh rocket. Dish can be served warm or cold. I preferred the salad cold but the fish warm.
